⚠ A WARNING ROW. Colombia is conventionally divided into six natural regions and the food follows them more closely than it follows the 32 departments. CARIBE — coconut, rice, plantain, yuca, ñame, seafood, goat, suero. PACÍFICO — coconut milk, seafood, forest and river foods, overwhelmingly Afro-descendant. ANDINA — three cordilleras, so three separate highland kitchens, with maize, potato, beans, pork and soup. ORINOQUÍA / LLANOS — cattle, open-fire beef, cassava, plains culture shared with Venezuela. AMAZONIA — cassava, river fish, forest foods, Indigenous. INSULAR — San Andrés and Providencia, Raizal and West Indian. ⚠ BOGOTÁ IS A CAPITAL DISTRICT, NOT A DEPARTMENT, and this system does not file it as one.
