Brazilian Coffee Foodways

Specialised

Brazil has been the world’s largest coffee producer for over 150 years and still grows roughly a third of global supply — Minas Gerais above all, with São Paulo, Espírito Santo, Bahia, Paraná and Rondônia for robusta. ⚠ THE COFFEE ECONOMY WAS BUILT ON SLAVERY and then, after 1888, on European and Japanese immigrant labour under conditions that were themselves contested; the Paraíba valley barons, the "coffee with milk" republic, the 1929 crash and the state burning of stocks are all part of it. Domestically: the cafezinho, small, strong and pre-sweetened, offered as a matter of courtesy, and a serious modern specialty sector.
