Six biomes, and the ingredient list changes completely across them. AMAZÔNIA — rainforest and floodplain, cassava, palm fruits, river fish. CERRADO — tropical savanna, the most biodiverse savanna on earth, with pequi, baru, buriti, mangaba, cagaita and araticum. CAATINGA — semi-arid thorn scrub found nowhere else, with umbu, licuri, goat and carne de sol. PANTANAL — the world’s largest tropical wetland, with river fish and cattle. MATA ATLÂNTICA — Atlantic forest, now under ten per cent of its extent, with jabuticaba, palmito and the coastal fisheries. PAMPA — grassland, cattle, mate.
