Semolina is moistened and rolled by hand with the fingertips until it forms grains, sieved to a grade, and then STEAMED — three times, classically — over the broth it will be served with, in the two-part couscoussier whose lower pot is the stew and whose upper is perforated. The grain is not boiled, and that is the whole technique. ⚠ IT IS OLDER THAN ARABIC IN NORTH AFRICA: the word is Amazigh (seksu), the earliest couscoussiers are archaeologically attested from the medieval Maghreb, and the dish is documented across Morocco, Algeria, Tunisia, Libya and Mauritania. ⚠ UNESCO INSCRIBED IT IN 2020 AS A JOINT NOMINATION BY ALGERIA, MAURITANIA, MOROCCO AND TUNISIA — which is the correct settlement of a long dispute and is exactly the model this system follows: shared, with national forms. Moroccan forms: SEVEN-VEGETABLE couscous; with lamb and caramelised onion and raisin (TFAYA); barley couscous (BELBOULA); BEDDAZ of maize; SEFFA, steamed sweet with almond, cinnamon and sugar; and the FRIDAY couscous, which is the institution — eaten after prayers, and the reason Friday smells of steam in a Moroccan street.
