FRESH young maize — not dry maize, not harina — grated or blended with a little sugar and salt and cooked on a budare into a thick, sweet, slightly ragged pancake. Folded over QUESO DE MANO, the soft hand-worked cheese that is its partner, or served with butter, cochino frito or queso guayanés. Sold from roadside stands on the highways of the central and Llanos states, which is where it is best known. ⚠ THE MAIZE MUST BE AT THE RIGHT STAGE; this is a seasonal food dressed up as an everyday one.
