Chivito means "little goat", and the usual account is that a visitor in Punta del Este around 1944 asked for roast kid, the restaurant had none, and sent out a thin beef steak in a roll instead, keeping the name. It has since accumulated: churrasco, ham, mozzarella, bacon, fried or boiled egg, lettuce, tomato, olives, pickled peppers and mayonnaise, in a bun โ€” or as CHIVITO AL PLATO, the same without bread and with chips and salads. Uruguayโ€™s national sandwich and a genuinely twentieth-century dish.
