Two soft fried turmeric-yellow BARA sandwiching curried CHANNA (chickpeas), then dressed to order: tamarind, kuchela, mango, cucumber, shadon beni, and pepper — the vendor asks "slight, medium or plenty pepper" and the answer matters. ⚠ THE NAME IS LITERAL: the original was one bara, and customers asking for "double" got two. Generally credited to the Deen family of Princes Town in the 1930s, an account widely repeated and not independently documented. Sold from a tray or a stand, wrapped in waxed paper, eaten standing up before work. ⚠ VEGETARIAN BY CONSTRUCTION, which is part of why it crosses every community in Trinidad.
