A flat maize griddle cake, cooked on an iron plate and folded round txistorra or cheese at fairs and festivals. โš  MAIZE REACHES THE BASQUE COUNTRY IN THE SEVENTEENTH CENTURY and then becomes the bread of the poor, replacing millet and chestnut. Talo is emphatically NOT an ancient pre-Columbian food, whatever its rustic appearance suggests.
