Diaspora

Concentrated in Minnesota, Illinois, Wisconsin, Iowa, Michigan, Nebraska and the Pacific Northwest, and sustained through Lutheran and Covenant churches, colleges and festivals. The durable markers are the julbord in reduced form, LUTFISK suppers — which have become a more visible Swedish-American institution than they are in Sweden — Swedish pancakes and meatballs, limpa, ostkaka, cardamom bread, and the church coffee social. Lindsborg in Kansas, Chicago’s Andersonville and the Minnesota towns are the community centres. ⚠ NOT EVERY SCANDINAVIAN-AMERICAN DISH IS SWEDISH: lefse and krumkake are Norwegian markers and æbleskiver Danish ones.
