Two dairies that behave differently: the household cow, giving milk, sour milk, buttermilk, cream, butter and fresh curd all year; and the mountain sheep flock, giving a salted, soft, sharp cheese made on the polonyna in season. Curd is the default pirohy filling, sour cream the default sauce, and whey is drunk and cooked with rather than discarded.
