Wine is not an accompaniment to Moldovan foodways — it is a structural part of them. Moldova has one of the highest vineyard densities per head in the world, a household winemaking tradition in which a large share of families press their own, and a national wine day in October. The Cricova and Mileştii Mici underground cellars — kilometres of galleries in former limestone quarries — are among the largest in existence.
