Historical period

Collectivisation, deportations, and the 1946-47 famine; then a planned agricultural role as a supplier of wine, brandy, canned vegetables, fruit and tobacco to the whole Union, with large canneries and bottling plants; Russian and Ukrainian dishes entering the everyday repertoire through canteens, schools and army service; the 1985 anti-alcohol campaign uprooting vineyards; and a set of "national" restaurant dishes codified in this period that are now taken as traditional.
