Island
The islands where the Norwegian coastal cod spawns each winter and where the Lofotfisket — the largest cod fishery in the world for most of a millennium — takes place from January to April. Skrei, the migrating cod, eaten fresh with liver and roe; the rest hung on the hjell to dry in the cold spring wind into TØRRFISK. Also: stockfish of Lofoten holds a protected geographical indication; and the fishing villages, rorbuer and seasonal labour that the fishery organised.
