Pork is the centre of the Danish kitchen and of its agricultural economy: flæskesteg, the roast with crackling scored and salted, is the Christmas and Sunday dish; stegt flæsk med persillesovs — fried pork belly with parsley sauce — was voted the national dish in 2014; then bacon, ham, medisterpølse, frikadeller and leverpostej. The 19th-century cooperative movement built an export industry on bacon to Britain, and that market shaped the breed, the cut and the cure.
