Beans, white rice, ground or shredded beef, CHICHARRÓN, chorizo, morcilla, a fried egg, fried ripe plantain, an arepa, avocado and often a slice of tomato — on one very large platter. ⚠ THE MODERN PLATED DISH IS RECENT. Its components are old Antioquian farm food — the bean pot, the arepa, the chicharrón — but their assembly into a single named "bandeja" served in restaurants is generally traced to the second half of the twentieth century and is documented as a restaurant format, not an ancient dish. Its ancestors are the modest MONTAÑERO plate and the peasant meal, and calling every component ancient would be false.
