FUNGI (pronounced foon-jee) — cornmeal cooked with okra and beaten smooth, the same technique family as Bajan cou-cou and Virgin Islands fungi, and of West African descent; ⚠ recorded as a related but separate entity from cou-cou, because the national pairing differs. ANTIGUAN PEPPER POT — a thick stew of salt beef or pork with spinach, okra, aubergine, squash, onion and dumplings, eaten with fungi and ⚠ NOT the same dish as Guyanese, Bajan or Jamaican pepperpot. DUCANA — grated sweet potato and coconut with sugar and spice, wrapped in banana leaf and boiled, eaten with saltfish and often with spinach; the name is generally traced to a West African root, an attribution that is reported and not conclusively documented.
