Svið — Singed Sheep’s Head

Svið

Specialised

The sheep’s head singed to remove the wool, split, cleaned and boiled, eaten hot with mashed swede and potato or pressed cold into sviðasulta. ⚠ NOT A CURIOSITY. It is a straightforward use of an edible part of the animal in a country that could not waste any of it, and it is recorded here as ordinary food rather than as spectacle.
