North Schleswig — Danish until 1864, Prussian and then German until the 1920 plebiscite, and Danish since. Its food shows it: the sønderjysk kaffebord, a coffee table of a reputed sixteen to twenty-one cakes that is a genuine regional institution; ringriderpølse; rullepølse; and a strong sausage and baking tradition shared with Schleswig-Holstein.
