Cheese melted with ale, mustard and seasoning and poured over toast โ€” not simply cheese on toast. โš  THE NAME IS AN ENGLISH JOKE AT WELSH EXPENSE. The earliest recorded form is "Welsh rabbit", from an eighteenth-century English usage in which "Welsh" prefixed to a thing meant a poor substitute โ€” the rabbit a Welshman had was cheese, because he could not afford meat. "Rarebit" is a later genteel back-formation. The underlying dish, CAWS POBI, is genuinely Welsh and much older than the insult attached to it.
