Potatoes are the backbone of the modern Carpathian Rusyn kitchen — boiled whole, mashed into pirohy filling with curd or bryndza, grated into pancakes and baked puddings, worked into halušky, and put into soups — and they are also RECENT. ⚠ THE POTATO IS AMERICAN. It spread through the Carpathians in the late 18th and 19th centuries, pushed by Habsburg policy and by famine; no potato dish here is ancient, and the local name krumplї is borrowed from German Grundbirne via Hungarian.
