⚠ A WARNING ROW. Peru is conventionally read as three longitudinal strips and the food differs completely across them. COSTA — a narrow desert coast crossed by short rivers, watered by irrigation, fed by the Humboldt Current, and holding Lima and most of the population. SIERRA — the Andes, from valley floors to puna above 4,000 m, with the potato and maize diversity and the Quechua and Aymara communities. SELVA — the Amazon, roughly 60 per cent of the national territory and a small share of its people, with cassava, river fish and dozens of Indigenous peoples. ⚠ PERU IS NOT CEVICHE, NOT POTATOES, NOT THE INCA AND NOT LIMA.
