The ALPWIRTSCHAFT: cattle driven up to the Alpen in early summer — Malbun, Steg, Gapfahl, Sücka — and brought down at the ALPABTRIEB in September, the cows decorated, which is now the country’s most-attended rural event. Milk made into cheese and butter at the hut because it could not be carried down; SAUERKÄSE and Alpkäse; Ziger; and the butter that went into everything.
