The Lemko homeland along the northern slope of the Low Beskids in present-day south-eastern Poland โ€” a foodways region whose population was almost entirely removed between 1945 and 1947, so that its kitchen now survives largely in resettled communities and in returnees. Oats, rye, potatoes, cabbage, mushrooms, sheep dairy, and a bread-and-fast calendar.
