The WADDEN SEA โ€” the largest unbroken tidal flat system in the world, a UNESCO site shared by the Netherlands, Germany and Denmark: mussels, cockles, oysters, grey shrimp gathered and trawled, and the wadlopen mudflat walking that was a working practice before it was a sport. Beyond it the North Sea: plaice, sole, cod and herring. And EEL, smoked, from the lakes and the former Zuiderzee โ€” a tradition now heavily restricted, the European eel being critically endangered.
