The Basque farmhouse as a food system: a house holding family, animals and harvest together, with orchard and cider press, vegetable garden, maize and beans, a pig killed in winter, sheep on the hill, hens, and preserving as the year’s main work. ⚠ A modern farm is not this: the baserri described here is a historical economy, and most of its self-sufficiency ended with industrialisation.
