Historical period

The German-speaking nobility, clergy and burghers who ran Livonia, Courland and Estonia for seven centuries: manor kitchens, Riga and Tallinn town houses, German cookbooks adapted to local fish and grain, beer and coffee culture. โš  THEIR OWN LAYER, not Latvian or Estonian food. Almost all were resettled to Germany in 1939.
