The gaucho was a mounted rural worker of the PAMPAS — of mixed Spanish, Indigenous and sometimes African descent — and the culture that formed around cattle, horse, fire and mate became a national symbol in the late 19th century, at precisely the moment the way of life was ending, through Martín Fierro and the Día de la Tradición. Its food: asado at the stake, charqui, galleta, mate, puchero, carbonada. ⚠ GAUCHO IS NOT A SYNONYM FOR ARGENTINE, and the culture is shared with Uruguay and Rio Grande do Sul.
