Read it twice: once for what happens, once for when.
First pass: what is this dish, and what does it end up like? Second pass: build a timeline. Note anything that has to happen hours ahead, anything that cannot wait once started, and anything that needs a temperature rather than a time.
Recipes are written as lists of steps, which hides the two things that actually cause failure: work that needed starting yesterday, and steps with no slack. A timeline makes both visible before the heat is on.
Every unfamiliar recipe, and every familiar one being scaled or rescheduled.
Starting to cook on the first read; missing a soak, marinade, rest or chill; not noticing that two steps both need your whole attention at the same moment.
