The westernmost Rusyn group, of the Low Beskids and the Poprad valley: oat and rye bread, potatoes, soured cabbage and barley, sheep and cow dairy, mushrooms in quantity, and kysele โ€” a soured oat- or rye-bran soup that is the defining Lemko dish. โš  LEMKO IS NOT A KIND OF POLISH: the communities were East Slavic and Byzantine-rite, and their presence in Poland is a fact of geography, not of identity.
