The cooperative dairy movement from 1882 — Hjedding was the first — industrialised Danish butter and made it a world export, and the country is still one of the most intensive dairy producers in Europe. Butter, milk, cream, kærnemælk and the sour-milk drinks; tykmælk and ymer; fløderand and cold buttermilk soup in summer.
