The staples: taro, YAM — which carries particular prestige in Tonga and is associated with rank and with first-fruits obligation — cassava, sweet potato, breadfruit, green banana and coconut. The dishes: LU PULU and LU SIPI, taro leaves with coconut cream and corned beef or mutton, baked in the ‘umu; ‘OTA ‘IKA, the raw fish; OTA; FAIKAKAI; TOPAI dumplings; and the whole PUAKA TUNU. KAVA is drunk formally, in a circle with an order of precedence, and the faikava is a social institution for men. ⚠ AND THE VULNERABILITY IS ACUTE: Tonga sits in the cyclone belt on the Ring of Fire, and the 2022 Hunga Tonga-Hunga Ha‘apai eruption and tsunami destroyed crops, salted gardens and severed the country’s single fibre cable — a documented food-security event whose recovery took years.
