Endingen and Lengnau in Aargau were the only two places Jews were permitted to live in Switzerland for much of the eighteenth and nineteenth centuries, which produced a specific rural Swiss Jewish kitchen. Kosher slaughter has been prohibited since an 1893 referendum and kosher meat is imported; that is a live constraint, not a historical footnote.documented
