Until 1944 the market towns and many villages of Subcarpathian Rus, Šariš, Zemplín and the Lemko region held large Jewish communities — traders, millers, innkeepers, distillers and the kosher butchers whose presence shaped what non-Jewish neighbours could buy, sell and slaughter. Their destruction in the Holocaust removed an entire layer of the regional food economy as well as a cuisine. Recorded here as a distinct tradition in contact with Rusyn foodways, never as a part of it.
