Rusyn Foodways in Hungary

Rusyns are a recognised nationality in Hungary with elected minority self-governments, concentrated in the north-east and in Budapest, and descended both from Carpathian villages inside the historic Kingdom and from later migration. Their kitchen carries paprika, lard, noodle and stuffed-cabbage forms from the Hungarian plain alongside the Byzantine-rite fast calendar.
