⚠ THE LONGEST CARIBBEAN COASTLINE IN CENTRAL AMERICA, and a food world that is not the interior’s. Atlántida, Colón, Cortés and northern Yoro: LA CEIBA, Tela, Trujillo, Puerto Cortés, Omoa. COCONUT is the fat and the liquid — rice cooked in coconut milk, fish in coconut milk, coconut bread. CASSAVA, plantain in every stage of ripeness, breadfruit, yam and malanga. Reef and lagoon fish, snapper, snook, shrimp, crab, conch. PESCADO FRITO whole with tajadas and curtido. SOPA DE CARACOL and TAPADO. Baleadas are here too — ⚠ THE NORTH COAST IS WHERE THE BALEADA IS MOST STRONGLY ATTESTED. And the GARIFUNA towns are strung along this coast, which is a presence, not a seasoning.
