MONS, TOURNAI โ€” one of the oldest cities in Belgium, with its own long history โ€” CHARLEROI and the Borinage coalfield. Industrial and mining foodways: the shift meal, the company canteen, and the Italian, Polish, Spanish, Greek, Moroccan and Turkish communities recruited to the pits, whose cooking is now ordinary Walloon food. Also the BINCHE carnival, on the UNESCO list, where the Gilles throw oranges; Ath; and tarte al djote from Nivelles.
