⚠ THE ONLY CENTRAL AMERICAN COUNTRY WITHOUT A CARIBBEAN COAST, and the smallest and most densely populated. Fourteen departments, volcanic soil, and a food culture organised around MAIZE and the comal. The PUPUSA is the national dish and has a national day. Beyond it: TAMALES — de gallina, PISQUES (with beans, plain, for Lent and vigils), de elote; YUCA FRITA con chicharrón and curtido; PANES CON POLLO/pavo, the long sandwich in relajo sauce; SOPA DE PATA and sopa de res; CASAMIENTO, rice and beans married; RIGUAS and atol de elote from fresh maize; QUESADILLA SALVADOREÑA, which is a sweet cheese cake and not a Mexican quesadilla; SEMITA; NUÉGADOS; and the drinks HORCHATA (⚠ made from MORRO seed, not rice, which distinguishes it from every other horchata), CHILATE and fresco de ensalada.
