A fixed liturgy: the Selkirk Grace, the soup, the haggis piped in and addressed with Burns’s "Address to a Haggis" — cut open at the line "an cut you up wi ready slicht" — served with NEEPS AND TATTIES and a dram, then the Immortal Memory, the Toast to the Lassies and the reply, and Auld Lang Syne. ⚠ A LITERARY FESTIVAL THAT BECAME A FOOD ONE, and the principal vehicle by which Scottish food travels abroad.
